The catering industry is a major element of tourism in France and particularly in Paris. The French gastronomic meal, recently given Unesco heritage status, is a tourist attraction, although the food industry as a whole is varied with fast-food, sandwich shops, traditional and international cooking, etc. This diversity is something to emphasize and even encourage. But it raises difficulties, notably that of considering Paris’s catering industry market as a whole, as well as the division of information available on this subject.
